EAT! is brunch’s best version of itself. Bringing brunch to the next level in our own Broomfield, Colorado, EAT! combines homestyle classics and Sunday favorites with craftsmanship, artistry, and a touch of cheeky creativity. Their menu is integrated with products from Colorado owned businesses such as Dazbog coffee, Moe’s Bagels, and Enchanted Oven Bakery. They have a ton of gluten free options and are likely to please even the pickiest of vegans and omnivores alike.
If you have been sleeping on your brunch game (pun intended), not to worry, below is a list of favorites from an EAT! fanatic and expert, their own general manager, Brittany Bartlet. She is who I consider to be the face of EAT!. Any time I have dined with them, Brittany was engaging with customers, offering menu suggestions, and pairing her guest with their perfect brunch. And now, it is your turn to receive the best recommendations on brunch, from someone who has literally made it their profession. Below is a guide of what you must try, the next time you eat at EAT!
1. Appetizer- The Sweet And Savory Bacon Flight
This heavenly creation features a combination of maple brown sugar bacon and jalapeno bacon. This savory creation takes bacon to the next level.
2. Pancakes- The Hawaiian Pineapple Cakes (Gluten Free Option Available)
A perfect plate for a sweet tooth, sweet cream pancakes with caramelized pineapple topped in house-made coconut syrup.
3. Eggs Benedict- You can Thank Us Later Benedict (Gluten Free Option Available)
House-made Argentinian chorizo served on a grilled ciabatta, topped with two perfectly poached eggs and a smoked paprika hollandaise.
4. World’s Best Biscuits ‘n Gravy
A mouthwatering biscuit made fresh from The Enchanted Oven Bakery next door, and smothered in a country gravy so good, it’s grandma approved.
5. Sandwich- Reuben’s Cousin
Thinly sliced pastrami, baby Swiss and sauerkraut on a marbled rye with a fantastically delicious Russian dressing. (ask)
6. Salad- Salmon Is At It Again
Mindfully sourced and made using Denver’s own honey smoked salmon on top of a bed of lemon dressed arugula and served with quinoa.
7. Tacos- Michoacan Carnivorous Carnitas
A perfected pulled pork made genuinely slow cooked and delicious using their own Chef Sergio’s recipe. Served with aside of pork green chili, and along side warm tortillas, pico de gallo, guacamole and authentic house-made rice and beans.

Brittany also hand crafted their drink menu which features bottomless flavored mimosas (8 flavors to be exact), and the best bloody mary on the front range. Their southwest bloody mary contains infused green chile vodka and a smokey habanero bloody mary mix that will have you wondering why you ever wasted your time boozing and brunching any where else.
An Eatery Masterpiece
The amount of thought and creativity that went into creating this mid day eatery masterpiece is one for the ages. And while I don’t want my favorite brunch place to be bombarded by budding fans, it feels criminal not to give this place the recognition it deserves. EAT! is brunching better. Why aren’t you?
